I Need Some Joy

Today is the monthly "More Joy" day, but I am not feeling the joy at all. Weird stuff at work, threatening my 2 wonderful projects, on top of 2 nights of fitful sleep in a row. 

I'm really liking CKR's eyelashes in this icon, and I do have a plan to give some joy to someone today.  Next month, my recipient is going to be Rupert - he would like to see Victor Wooten in concert at the Barrymore (4/11) and I think it's an excellent opportunity for him.

But now it's your turn - tell me something joyful, please.

I Need Some Joy

Joy? Well, today I did something very unusual - for me! I shopped for vegetables on purpose and created a kind of "veggie stew with salmon (canned)" - a whole big batch of it! And it was a success! That only means *I* liked it since I live alone, but that's great, isn't it, since I ordinarily don't like vegetables?

So, salmon, plus potatoes, green peppers, zucchini, eggplant, crushed tomatoes, spaghetti sauce, and a can of black beans! Cooked in margarine and corn oil, with some seasonings. I could have simmered the sliced zucchini a little more - it was a little too raw for me - but the eggplant tasted great, as did all the rest, and I'll remember for next time to cut things up in smaller pieces.... And I've got lots of leftovers I can freeze in smaller portions for one-step meals without fuss!

Joy! Joy to you! May the rest of the week be much much better!

yes it is! We loved our CSA, but then we got so used to buying direct from the farmers' market that we just do that now.
